With the arrival of the cold weather in the Ribera del Duero, the root activity of the vines is suspended due to the sharp drop in soil temperature. The canes from the previous vintage are removed during dry pruning to encourage the rejuvenation of the plant, at the exact moment when the flow of sap has stopped. But as spring advances and the soil surface begins to warm up progressively, life returns to the vineyard.<\/p>\n\n\n\n
The weeping symbolises the awakening of nature. The sap, which has remained dormant within the grapevine during the winter months, begins to flow through the wounds made by the cuts from previous pruning. This natural phenomenon is the best indicator of the correct progression of the grapevine cycle.<\/p>\n\n\n\n
It is called weeping because the flow of sap does not accumulate, but instead flows from the pruning cuts and drips, in the form of tears, for several days, managing to pour between three and five litres per grapevine.<\/p>\n\n\n\n
The new torrent of plant nutrients and hormones flowing from the roots towards the ends of the trunk, besides being the food source for the grapevine's new buds, acts as a healing substance. A gummy film covers the incisions and protects the plant's vessels.<\/p>\n\n\n\n
This stage occurs prior to what is known as bud burst. With the reactivation of sap flow, the first green vine shoots begin to take centre stage. These buds swell as the days pass and become covered in a cotton-wool-like tissue called wool. As soon as the new leaves are ready to open, they shed the whitish layer covering them and begin to sprout.
