What does this mean? That, when receiving the grapes, they are taken to an OVI tank so that this mobile tank can distribute them to the rest of the vessels, which are at a lower height. Thus, by gravity, the wine is transferred from one tank to another without pumping, improving the quality of the must by avoiding organoleptic losses in the grape. Subsequent movements of the wine will also be carried out using the OVI until its final stage, when the barrels are filled.<\/p>\n\n\n\n
To be able to have a gravity-fed winery, an initial investment is necessary to adapt it, as it must be laid out on different levels. The main difference from a traditional one, apart from its spatial design, is that it eliminates all kinds of friction and rubbing that the grapes undergo throughout the entire process.<\/p>\n\n\n\n
