Gravity
True to our commitment to the vineyard and the natural balance that sustains it, we have turned gravity into our best ally in the crafting of every wine.
We work plot by plot —and sometimes even micro-plot— so that the personality of each soil, aspect and variety can develop without interference before coming together in the final blend, where the harmony of the whole is orchestrated.
We transport the grapes using the OVI system, an ingenious mechanism that gently moves the grapes towards the tanks, avoiding any pumping or forced racking. Thanks to this controlled movement, the skins do not suffer scuffing or crushing, and the berry arrives whole, fresh and without premature oxidation. In this way, we preserve intact the varietal aroma, the vivacity of the musts and the expressive purity that, glass after glass, defines the style of our wines.
Patented System of
Gravity winemaking
In 2004, Carmelo conceived and patented a unique rotating system that perfects gravity-fed winemaking by reducing grape handling to a minimum.
Unlike traditional methods —in which the fruit must be transported to the storage facilities—, in this design it is the containers themselves that are getting closer, without the need for pumps or any forced transfer.
From an oenological perspective, the technique protects the integrity of the grape, mitigates premature oxidation and keeps the aromatic and flavour profile intact. Over time, innovation has become a benchmark, combining artisanal wisdom with technological precision to produce wines of great purity and exquisite finesse.
Know Do
In the barrel cellar beats the savoir-faire of our family. Beneath its silent vault, the wines are aged exclusively in French oak —fine-grained staves, selected one by one— and never in barrels older than two years, to preserve the freshness of the fruit and impart noble, precise and silky tannins.
Since 2008, Beatriz Rodero —winemaker and heir to the innovative spirit of her father, Carmelo— leads this crucial chapter; she is the artist who shapes every wine, balancing tradition and contemporary sensibility. In their careful rest, the wines breathe slowly, polish their texture and refine their bouquet.
