Pairing food and wine to perfection is no easy task. Therefore, we present the different possibilities that our references have to offer:
CARMELO RODERO 9 MONTHS
As its name suggests, this Crianza has spent 9 months in French oak barrels. The primary aromas of the Tempranillo predominate. A structured, balanced and pleasant wine that always leaves you wanting more. Due to its organoleptic characteristics, it pairs very well with seafood, roasted vegetables, semi-cured cheeses, cured meats, pasta-based dishes or young meats in simple preparations. Another option is to pair it with various types of rice dishes accompanied by rich sauces such as sofrito. In this way, we find a contrasting pairing that does not overpower the flavour.
CARMELO RODERO CRIANZA
Carmelo Rodero Crianza is a wine made from 90% Tempranillo and a touch of Cabernet Sauvignon (10%). This blend results in a wine with fruity notes, dominated by the Tempranillo, and nuances that reflect its 15-month ageing in oak barrels. It has sweet tannins and a medium-bodied, luscious texture that pairs perfectly with white and red meats, or more robust dishes such as roast or barbecued meats, cured meats, strong cheeses and Iberian cured meats.
CARMELO RODERO RESERVA
The character of Carmelo Rodero Reserva is marked by the origin of the grapes with which it is made, coming from 45-year-old vineyards. Cabernet Sauvignon and Tempranillo come together to create this jewel, a wine that undergoes malolactic fermentation in barrel and a 21-month ageing process. Time gives it a spicy touch with a strong presence of black fruits while allowing it to retain its freshness. It is a wine of
Persistent and well-balanced aftertaste that will accompany red meats and large game. Due to its pronounced time in oak, it will pair well with very mature cheeses. It is recommended to avoid very salty or sweet dishes.
Pago de Valtarreña
Pago de Valtarreña is one of our most special references. A boutique wine made from Tempranillo grapes sourced from a single estate with clay soils and cool sands. To top it all off, its 24-month ageing in French oak barrels shapes its distinctive personality. An attractive cherry-coloured red wine in which black fruits and spiciness blend with hints of toasted leather and coffee. This velvety, fleshy and well-balanced wine will pair harmoniously with stews where the sauces are not overly spiced, boiled or stewed pulses, roasts, grilled red meats and poultry.
CARMELO RODERO TSM
Carmelo Rodero TSM is born from the exquisite union of Tempranillo, Cabernet Sauvignon and Merlot. A wine with a great personality and an infinity of nuances that will leave our senses far from indifferent. TSM is persistent and has a very long aftertaste, leaving a great impression on the palate. Therefore, it is important to choose the foods that will accompany this great wine. It is perfect to accompany flavourful combinations such as game dishes or elaborate stews. A groundbreaking option that TSM offers us is to pair it with sweets. For example, high cocoa purity chocolates are a perfect accompaniment if we want to propose something different to our palate.
